Well I am finally back down to weight I was after I got out of the Hospital. The good news was since mid-June when I got out of ICU I only ever gained 10 LBS. So even after I stopped dieting and really eating terrible I only gained those 10. About a week ago I saw my diabetes doctor and my A1C was holding where it should be. So she took me off the Insulin. The dietician re-adjusted my carb (was eating in the 200 carb range) intake (down to 150) and told me to cut back on calories from 2100 to 1800 so the result was an 7.8 lb weight loss this week.

Well I have restarted my dieting, Spoke (via emails) with my dietitian and got my new are reinstated goals. In any case she wants me to go back to eating only 150 crab's a day, or max 50 carbs per meal. And try to keep calories around 1900 per day. The calories part is fairly easy the carb side not so much. For the most part I am 100 to 300 calories below the target goal averaging right now 1276 calories and roughly 156 carbs per day.
Yesterday was a high carb day over 220 carbs. However the days before were 105 and 143 so one day way over brought the average up to the 156 mark. The difference was I had more pasta then I should have at dinner that meal alone was 95 carbs.
So I told my wife who is a HUGE pasta lover that since I am the cook I am limiting Pasta to one day a week period. She can either eat what I make for dinner are cook her own meals.

Well I started cutting back on the carbs and calories... right now I am Soooooo Hungry!!! Desperately trying to stay below 180 carbs and 1900 calories this week. The downside is the Mrs (who BTW could stand to diet as well). However, I love her and would never say that to her, as I like living as well!
I digress, I am back to making 2 separate meals at each mealtime. Which is tiring to say the least. I have been going though my Diabetes cookbooks trying to find recipes that everyone will be able to eat. Hopefully, without too much complaining.
