Lasagna de Berenjenas

Lasagna baja en carbohidratos, constituye un tiempo de comida completo y se puede acompañar con ensalada verde al gusto.

Directions

  1. Cortar la berengena en finas rodajas, ponerlas en un recipiente hondo con agua y sal y dejar reposar unos minutos mientras se calienta la parrilla, sartén o plancha.
  2. Asar las berenjenas y reservar.
  3. Asar el resto de los vegetales (ajo, cebolla, tomate, chile pimiento y orégano si estuviese fresco). Licuarlo con poca agua hasta hacer una pasta suave.
  4. Calentar un sarten hondo o una olla y colocar el aceite de oliva para posteriormente vertir la carne. Sazonar con sal y pimienta al gusto y el vinagre balsámico. Cuando esté a media cocción vertir los hongos en rodajas y la salsa. Dejar hervir por aproximadamente 5 minutos y reservar.
  5. En un recipiente para hornear colocar los ingredientes en el siguiente orden: 1 capa de salsa de carne, 1 capa de berenjenas asadas, 1 capa de queso. Suscesivamente hasta haber colocado todos los ingredientes.
  6. Hornear a temperatura alta hasta que hierva (5-10 minutos). Y servir.
