Oat Bran Carrot Muffins

A big, moist and yummy muffin that's great for Weight Watchers.

Ingredients

Directions

  1. Combine dry ingredients in large mixing bowl. Stir in grated carrot to coat, breaking up lumps.
  2. Beat egg and combine with milk and applesauce.
  3. Add wet ingredients to dry and mix just until combined.
  4. Bake in paper cups at 400 degrees F for 20-25 minutes.
  5. Makes 6 large muffins or 12 small muffins.
  6. Note: Splenda packets can be substituted with 1/4 to 1/2 cup of granulated sweetener.

Just made these and they turned out great & were easy to make. I used 1/2 cup brown sugar, 1 packet truvia, added a splash of vanilla, and did not use ginger. I ground Oat Bran cereal b/c I didn't have oat bran. My kids just scarfed these up. It feels good to have such a healthy snack for everyone that tastes good too.

I changed up the spices a bit - I deleted the ginger and double the cinnamon to 2 tsp. I like the taste even better!

I eat more sodium than that anyway. Not everyone has to have perfect levels of everything every day, my goodness! 633 mg is only 30% of Dv, that's not that bad.

This recipe has 655 mg of sodium per muffin...Wow that's a lot for just one little muffin...You're not supposed to consume more than 1000 mg according to healthy guidelines and this takes more than half of that... Not to mention that you have to eat throughout the day and you will definitely eat past the 1000 mg mark.
