Thai Pea Soup
Delicious soup with Asian flavors.
Ingredients
Directions
- Boil stock in a large pan over high heat
- Add garlic, curry paste and mint. Reduce heat, cover and simmer for 5 minutes.
- Add peas and cook for 5 minutes.
- Transfer into a blender and puree until smooth.
- Season with salt and pepper.
- Heat oil in a heavy nonstick skillet over medium high heat. Sauté mustard seeds until they start to pop. Pour oil spice mixture over soup.

So quick, so easy, so lo-cal and yummy. Used red curry paste instead of curry powder and Vietnamese mint instead of regular. Thanks dee it's a keeper!

I cooked this recipe on Sunday and have enough for myself to eat all week. Added a little extra curry powder and have been dipping in my vegeterian quiche...so tasty that the boyfriend stole one of my tupperwares and had it for his lunch too!
