- Couper en cubes courgettes et aubergines. Émincer l'oignon et l'ail.
- Dans une poêle, mettre de l'huile d'olives. Faire revenir oignon et ail pendant 5 minutes.
- Ajouter courgettes. Faire revenir 5-10 minutes à feu fort.
- Ajouter les aubergines. Faire revenir 5-10 minutes à feu fort.
- Ajouter la sauce tomates. Ajouter le thym, sel, poivre, et persil. Faire cuire 20-30 minutes à feu doux.
- Ajouter du sucre si la sauce est trop acide.
- Mettre dans un plat allant au four. Casser un œuf au dessus.
- Faire cuire au grill à 240°C pendant 2 à 3 minutes.
