A super tasty chicken capri dish that's great for everyone.
Ingredients
Directions
- In a blender or food processor, combine the ricotta with the oregano, salt, and pepper. Process to blend.
- Rub the chicken with the garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for 12 minutes per side.
- Place the chicken breasts, side by side, in a large baking dish and allow to cool.
- Preheat the oven to 350° F (180° C).
- Spoon 1/4 cup of the cheese mixture and 1/4 cup tomatoes onto each chicken breast. Top each chicken breast with 1 slice mozzarella.
- Bake for 20 minutes, or until a thermometer inserted in the thickest portion of a breast registers 170° F (75° C) and the juices run clear.

This was a great recipe. The whole family loved it. The ricotta cheese was a great addition to the chicken. I used cherry tomatoes instead or large tomato slices just because that's what I had on hand.

Cooking the chicken 25 minutes before going into the oven and then 20 minutes in the oven is WAy over cooking the breast. Cook in skillet just long enough for the outside to be brown. Add fresh basil and it is delicious.

I would swap the ricotta for Breakstone LiveActive cottage cheese, leave out the mozzarella, and sprinkle parmesan cheese on top to make it work for cycle 1.

I made this for the first time tonight and lowered the amount of carbs just by using whole milk ricotta perfect for the induction phase!

Great recipe. Made two mistakes, blended the ricotta and became too liquid, had to add an egg white. Next time just mix the ingredients by hand. Family hates tomatoes, substituted roasted red pepper.

I tried this last night and it was really good. The taste of the fresh tomatoes when combined with the Italian flavors of the chicken and the creaminess of the ricotta was simply delicious. Yummy!
