Curried Lentils

An extremely simple lentil dish which is very good over rice.

Ingredients

Directions

  1. Sauté the onions in a small amount of the broth and the lemon juice.
  2. When the onions are translucent and fragrant, add the curry powder and lentils and sauté for another minute or so.
  3. Add the rest of the ingredients and simmer until the vegetables are cooked.
  4. Adjust the amount of curry to taste.
  5. Serve over long grain rice.

I am not sure what happened, but the first time I made this it was a hit, everyone loved it. The second time it was insanely spicy. Also, serving size?

We loved this! Adding a cup of cooked raisins made for a very delish 'middle-eastern' dish. If eaten as a side dish, 1/2 serving is plenty.
