As I don‘t use recipes nor measure, it‘s hard to share a recipe @rudiknmi .. I cook using methods & ingredients in the fridge. First time, I‘ve made it this way.

Thx so much ikarüs💞 My best tips are as follows: #1: Don‘t overcook fish - (a) if raw, take the simmering pot of chowder off the stove and add large chunks of fish (1-2“ cubes) allowing them to steep for 8-10 min covered OR (b) if fish is as already cooked, add fish to bowls and pour stock over it at service.
#2: Test fish doneness using a thin metal skewer or cake tester by sticking into fish for 2 secons and the touching to the sensitive area just below your bottom lip. Done if it‘s slightly warm
#3: Onions, thyme and bacon are a mstch made in heaven.
#4: You can thicken your chowder by extracting some cooked potatoes and buzzing them with your soup stock until pureed and then adding back. Or make a roux by adding flour/potato starch/instant potatoes to sweated bacon/onion
#5: This chowder used a sauteed sweet corn and red pepper medley from the previous night. Corn adds sweetness and texture.
