Breakfast Muffins

Low carb breakfast muffins with egg, bacon and veggies. Yum.

Ingredients

Directions

  1. Butter 4 holes in muffin tin, place one slice of bacon in each and place in the oven for 5-10 minutes at 180 °C.
  2. While the bacon is cooking chop the onion and mushroom and fry in a bit of butter.
  3. Mix the eggs in a separate bowl, add some salt and pepper.
  4. Remove the bacon from the oven and divide the onion and mushroom mix between the 4. Place 2 cherry tomatoes on each and sprinkle with cheese.
  5. Return to the oven for 10-15 minutes until cooked.
