Low Carb Meat Loaf

Tasty meat loaf that's Atkins friendly.

Ingredients

Directions

  1. Pre-heat oven on 370 °F (185 °C).
  2. Chop onions and shred or mince garlic. Mix well all ingredients in recipe together. Except water.
  3. Form two loafs. Lay on oven safe cooking dish. Pour water around loafs.
  4. Bake approximately 1 1/2 hours or until done (try with skewer if blood is coming out when poke it in loaf).
  5. Serve with your favorite side dish.
  6. Note: tastes good cold or hot with mustard.

It is ok but I found that 1 Tbsp of salt was way too much :(. Maybe start with 1 to 1.5 tsp. and then salt more if needed after it is cooked. Thank you for a good low carb recipe.

Made this with a few modifications (based on what was on hand). Didn't use the water, but baked in regular loaf pan. It turned out great! Tasted wonderful.

This recipe, as is, would be perfect for the Belly Fat Cure. Sugar per serving is only 0.93g. Total carbohydrate is 5.17g so a serving would count as 1 serving carb, and dietary fiber is 1.2g. Add vegetables, with 5 to 20 carbs, for 1 more serving carbs, keeping sugar grams to 4.06 or less, and your have the ideal meal for the Belly Fat Cure.

I'd use 1 lb ground beef and 1 lb ground turkey for a more firm meatloaf.
