Pancakes alla Banana con Farina di Segale

Pancakes ultra-light e proteici a base di albumi, banana e farina di segale.

Ingredients

Directions

  1. Prendere una banana ben matura sbucciarla, tagliarla a pezzetti e schiacciarla con una forchetta fino a ottenere una purea. Aggiungere i 100 grammi di albume e mescolare energicamente con le fruste o con una forchetta.
  2. Aggiungere setacciando 30 grammi di farina di segale e mescolare energicamente. Aggiungere quindi un cucchiaio di cannella e un cucchiaio di bicarbonato di sodio. Mescolare.
  3. Scaldare un filo d'olio in una padella antiaderente, spalmarlo con un tovagliolo e mettere a cuocere piccole porzioni di pastella alla volta. Dovrebbero uscire circa 6 pancakes medi.
