Super moist and yummy healthy muffins made with coconut flour and honey.
Ingredients
Directions
- Preheat oven to 350 °F (175 °C).
- Combine coconut flour, cinnamon, baking soda, and salt.
- In a blender or bowl, combine eggs, honey, vanilla, and coconut oil.
- Add dry to wet ingredients and pulse to mix. Let sit 3-5 minutes to allow flour to absorb liquids.
- Add apple cider vinegar, banana, and shredded zucchini to the mixture and pulse to combine.
- Add batter to pan with muffin liners and bake for 25 minutes or until toothpick comes out clean.
- Let cool. Keep leftovers refrigerated.

Great recipe! They turned out so nicely and are very tasty. What I would do differently for next time is to grate the zucchini even smaller. They were bigger shredded pieces but it was still fantastic. I definitely recommend this for a good breakfast muffin
