Caponata de Berinjela

Muito gostosa, saudável e tem cara de sofisticada, mas é super fácil de fazer.

Directions

  1. Picar todos os ingredientes exceto as passas. Colocar em uma panela (exceto as passas), misturar bem, polvilhar com o sal e as ervas e regar bastante com o azeite de oliva.
  2. Refogar mexendo até reduzir a berinjela pela metade e ficar bem mole, sempre em fogo médio. Nos últimos 10 minutos inclua a uva passa.
  3. Pode servir ou esterilizar um pote de vidro hermético com água fervendo, espere esfriar, transfira para o pote hermético e conserve em geladeira.
