Salmon Salad Lettuce Wrap

Salmon with onions, carrots, capers and dressing in a lettuce wrap.

Ingredients

Directions

  1. Finely dice the carrots and onions.
  2. Combine all ingredients and mix well.
  3. Serve wrapped in the lettuce leaves.

Alternatives to the lettuce leaves are very young and tender collard green leaves with the center stem trimmed, or large sheets of Sushi Nori.

I had a small piece of left-over salmon. Also added some chopped olives. Left out the flaxseed oil as I didn't have any on hand. Very flavorful!
