Soy Flour Wraps

For folks who like wraps but are staying away from carbs. Easy to prepare.

Ingredients

Directions

  1. Take the eggs, crack open and seperate the yolks from the whites.
  2. Whisk the whites until well whipped like a blender.
  3. Add the egg yolks and the flour.
  4. Whisk lightly to mix - too much and you'll whip out the air from the whites
  5. Heat a pancake pan with a little rapeseed oil until the oil is near to smoking, add the mix.
  6. Heat for about one minute each side by flipping pancake style.
  7. Great served with mayo, lettuce greens and ham or chicken. Fold the wrap around the contents.

Just got a celiac disease diagnosis for my 15 year old, & looking for bread alternatives. I'm willing to make what she needs, & this looks pretty easy. Any idea if these could be made in bulk & stored (ie, freezer/fridge)?

Great recipe but please explain the peanut flour substitution to me again I don't seem to understand the reasoning there

good find! I used egg whites, ground dry roasted peanuts(instead of soy flour), because as I was reading the recipe, I found myself reading recipes and eating too many dry roasted peanuts. Also added blackened seasoning sprayed my Belgian waffle pan with butter flavored spray, and ended up with two waffles for a breakfast sandwich egg white omelette with 2% cheese, for tomorrow.A little more butter..less face...thanks.

Tried it, and it works really well. What is important is the size of the pan, and go ahead and add salt to the mix as well to make it more savoury.

Great low carb bread or wrap alternative for those that like sandwiches. Just make sure you whip the egg white until it's nearly to a meringue
