Stuffed Peppers Greek Style

Vegan stuffed green peppers.

Ingredients

Directions

  1. Cook meatless crumbles, mushroom, garlic, and half the tomatoes in a large nonstick skillet over medium heat for 5 minutes or until heated, stirring frequently.
  2. Stir in cooked orzo and feta cheese.
  3. Cut peppers in half lengthwise. Spoon mixture into peppers.
  4. Put remaining tomato into 8" square baking dish, top with peppers, cover.
  5. Bake at 350 °F (175 °C) for 30 minutes until heated through.
