Low Carb Crepes

Thin crepe like pancakes that are good for Atkins.

Ingredients

Directions

  1. Blend all ingredients till smooth.
  2. Cover bottom of pan with non-stick spray or olive oil.
  3. When pan is hot drizzle small amount of mixture around the pan until you have a pancake shape and very thin.
  4. Lightly brown on both sides.
  5. Layer between wax paper.
  6. Use or store in refrigerator or freeze for future use.

we added splenda and a little vanilla extract to the recipe which adds a nice flavor. we also took heavy whip creme and blueberries to make a sweet low carb filling

Taste was ok, but a bit grainy in texture. Trying to flip these were completely impossible with out breaking them. Serving size is 12. Crepes are made large so you can fill them, so I only got 4 out of this recipe. Maybe if I had made them super small, they would not have been hard to flip.

Loved the recipe..I made them today for quick dinner.modified a bit for a savoury version...added pinch of salt and chilli powder and 2 table spoons of cream...yummmmm

Loved these! I blended up some cottage cheese with splenda to use for filling with a few strawberries. Delicious and very filling!

**Note: Can use Defatted soy flour for low fat, low cal, but still has good protein.**
