Cheap and easy delicious chowder turns soup into a meal.
Ingredients
Directions
- Wash and chop white part of leek.
- Sauté leeks in olive oil and butter until tender. Sprinkle with a pinch of salt. Approximately 5 minutes.
- Add corn and a little of the juice from can.
- Chop potatoes into bite sized pieces. Add to pot.
- Slowly add broth until potatoes are tender. Add any remaining broth. Stir in crab delight.
- Season with salt, pepper, onion powder. Stir in half and half. Heat to desired temperature.
- Sprinkle with a pinch of nutmeg.

Quite yummy and very flavorful, but it was more soup-like than thick and chowder-like. The second time I made it, I used chopped up crab meat instead of crab salad (couldn't find any at the store), skipped the oil, used fat free half & half and reduced the chicken broth to 3 cups, and it was much thicker. The nutmeg adds a very interesting twist, too.

sounds so good but how much is one serving?

I thought this was really good. I skipped the olive oil and used fat free half and half. I also mashed up the potatoes a little at the end to thicken it up a little. I would make it again.
