Crockpot Beans & Pork Steak

Lean marinated pork, 3 kinds of beans and a myriad of flavors.

Ingredients

Directions

  1. Slice or cut meat in small cubes and marinate in a garlic lime (or flavor of your choice) marinade for approximately 1-2 hours or longer.
  2. While marinating meat, combine the black, kidney and small red beans in a large pot of boiling water and simmer on medium for approximately 2 hours with a dash of salt.
  3. Combine flour, lawry's or other seasoning salt, black pepper and cinnamon in large zip lock bag. Coat pieces of meat by shaking them in the bag about 5 pieces at a time, set aside.
  4. In large fry pan heat 1 tablespoon of olive oil. Add half of the meat, and brown on both sides. Repeat by adding another tablespoon of olive oil and browning the rest of the meat.
  5. In the same large fry pan as meat, (uncleaned, to get the rest of the spices added to onion) add 1 tablespoon of olive oil and heat.
  6. Slice large onion in large slices and add to the pan, turning heat to medium and add ground cloves until onions are cooked al dente.
  7. In large crockpot, add beans, meat, onions, and crushed garlic. Cook on medium heat for approximately 5 hours. Taste test after 3 hours and add spices to taste.
  8. Note: this recipe is absolutely worth the time, and little effort for a nice big pot of amazing flavors to have for left overs or serve a new and exciting meal to a large group!

I've made this a few other times and filled the crock with water to make it more of "soup" and it's quite tasty that way, too! =D
