Bloemkool Risotto

Koolhydraatarme risotto van bloemkool met champignons, erwten, knoflook en parmezaanse kaas.

Ingredients

Directions

  1. Verkruimel de bloemkool in de keukenmachine. Doe het in een kom en vermaal de walnoten en pijnboompitten samen in de keukenmachine. Snipper de ui en knoflook en bak deze in wat olijfolie glazig. Voeg de bloemkool, erwten en champignons en bak even mee. Maak van het bouillonblokje 500ml bouillon en giet dit erbij. Laat het geheel 5 min zachtjes koken tot het grootste deel van het vocht verdampt is. (Eventueel wat afgieten) meng de gemalen noten en parmezaanse kaas erdoorheen.
