Green Chile Egg Casserole

A delicious breakfast treat.

Ingredients

Directions

  1. Mix flour, baking powder and salt.
  2. Beat eggs and add flour mixture. Then add remaining ingredients.
  3. Spread in a 9 x 13" pan.
  4. Bake at 400 °F (200 °C) for 15 minutes, then at 350 °F (175 °C) for 35-40 minutes.

Soungs good but you are dividing a 10 egg dish into 24 servings. If you ate only 2 eggs worth then you are eating pretty much 5 servings making this a very high fat dish.

This is a fabulous cook ahead meal. Make your pan on Sunday and you have breakfast for the week! A small plop of plain greek yogurt on top helps keep it tasting moist!
