Moroccan Chicken with Fruit & Olive Topping

The pairing of dried fruit and olives is also characteristic of other North African cuisines, such as Tunisian and Algerian.

Ingredients

Directions

  1. Heat 2 teaspoons oil in a large non-stick skillet over medium-high heat.
  2. Sprinkle 1/2 teaspoon salt, 1/4 teaspoon pepper, and thyme evenly over chicken.
  3. Add chicken to pan; cook 4 minutes on each side or until done. Remove from pan; cover and keep warm.
  4. Heat remaining 1 teaspoon oil in pan.
  5. Add onion to pan; sauté 2 minutes until tender. Add garlic to pan; sauté 30 seconds.
  6. Add fruit and remaining ingredients to pan; cook 5 minutes or until liquid almost evaporates.
  7. Serve over Israeli couscous, a pearl-like pasta; sprinkle with chopped green onions.

I agree with all the comments mentioned below. I used thin cut chicken and paired it with Near East Wild mushroom couscous. Couldn't find Israeli couscous. I also thought it was Fantastic!

It was fantastic.. the perfect pairing of savory and sweet. It satisfied all the senses. The smell was out of this world. The taste was devine and the meat was moist with the dried fruit, a little chewy. It looked heavenly on the serving dish, like I'd spent all day preparing it. Even all of the "yum"'s and "mmm"'s satisfied my hearing. My family, from youngest to oldest, male and female can't wait 'til I make it again. Hey anything made with a little wine has got to be good right! An instant favorite at my house!
