This has been a great week for me, and I am so excited to go shopping for all the ingredients of this weeks vegan menu. Everything in the cookbook sounds sooooo goodn and I cant wait to try it! My time saving secret for the working girl (60 hours/week) is to make everything for the week on Sunday night. I set up my laptop in the kitchen and stream TV shows while I chop fresh veggies, hard boil eggs, and divide packages of nuts and fruit up into brown bags for lunch and snacks. Then I make dinner for that night in a big enough batch that I can save leftovers for the rest of the week. Ill measure portions out to take to work, just in case I stay late and freeze some to have variety in the following weeks.
