Well, I had my endoscopy on Friday, and they confirmed that I did have irritation in my esophagus, so they put me on a different medicine - a generic for Prilosec. I've taken it for 3 days now and can already tell the difference that it makes me feel much better.

However, they did offer some dietary restrictions, such as limiting caffeine, chocolate, fats and tomato-based foods. At first I was disappointed because it sounds like it cuts out many of the foods I like -- spaghetti, chili, the occasional cheeseburger... But I think I can satisfy myself by eating more lean proteins and veggies. I'll be looking for recipes and recommendations! They also recommended eating more frequent smaller meals rather than 3 large ones.

So now it's just up to me to keep an eye on what I eat... I have already basically cut caffeine out of my diet, which was difficult. I don't have huge chocolate cravings, and I think my fat intake will be fairly easy to manage. However, avoiding tomato-based things and spicy things will be difficult for me, because that is what I love. I'll try my best though! I'm guessing if I add in some more healthy leafy greens & cooling foods, my body will be more able to handle the occasional tomato sauce or spicy chili.

I'm having a hard time grocery shopping. I don't eat fresh foods quickly enough after I buy them -- they often go bad in my refrigerator. This problem might be solved if I committed to grocery shopping a little bit each week, but I'm certain I'd just end up spending MORE money that way.

Also, I don't have energy or motivation to cook 'for one'. Recently I've been having some luck getting those rotisserie chickens and pairing them with some instant rice -- it seems pretty healthy when you avoid eating the skin, and it's cost effective because a whole, ready-to-eat rotisserie chicken can last me over 5 days! But just eating chicken and rice for a whole week gets a bit boring. I think I just need to buckle down and force myself to cook.

Anyone have any good ideas on cooking and eating healthy for one? Any ideas on staples that I should keep around the kitchen, or things I should absolutely avoid?
