flax seed pancakes

2 slices chicken lunch meat
2 cheese cubes

Chicken fried "rice" (directions after intake)

Dinner:2 carbs

How to make "rice" for atkins.
You'll need raw cauliflower..not frozen.
and a cheese grater..like

take just the flower parts and grate to make the rice.
use the left over stems in place of what you would use chunks of potato in..like soup or hash browns,etc..or just steam and eat.
then take the grated cauliflower, or "rice" and use like you would normally make fried rice.

Wendy's Flax Seed Pancakes
healthy pancakes great for atkins or other low carb diet..but good for anyone!
Ingredients
3 tbsps ground flax seed
2 large egg
1 tsp cinnamon
1 tsp baking powder
1 tbsp heavy cream
1 tsp vanilla
1 serving splenda
Directions
1.dump every ingredient into a bowl and wisk until mixed well.
2.heat a skillet and melt a pat of butter or use cooking spray.
3.cook like regular pancakes,turning when starting to set around edges and cook on the other side. These brown fast so watch carefully!
4.drizzle suger free syrup, low carb peanut butter,cream cheese...or anything you like on top that's allowed of course!
This can also be made savory by leaving out vanilla,cinnamon and splenda. add in any herb or spice of your choice and use it as a bun for a burger..making 2 big round bun shapes as you cook them!

Wow yesterday evening I got hit hard with munchies.
I used to pop a bag of 100cal popcorn each night and share w/ my kids.
Last night they wanted some so I made them a bag to share..I resisted..but it was SOOOO tough.
Then I found my coconut flavored sunflower seeds I found at the Korean market when I was shopping w/ hubby and I ate a few handfuls..
don't know the exact carb count..but they were in the shell..and I know low.
