ok now I'm a little pissed. I am eating such the wrong foods!!! I have no problem getting the right amount of carbs but I'm having all kinds of trouble getting the right amount of calories on some days.(oh but on others am I way over)

Actually, your menu looks great, but you just need to add protein and fat. Once you do that, your calories should be in hte right range.
