Ah, AncientHippie, I'm of the firm opinion that it doesn't necessarily need to be low-cal to be healthy! Really looks like a lot of nutrition packed into those. I'd totally do the same concept for myself, just vegetarian. (NOT that there's anything wrong with the beef! Just not my thing.)
