This is a quarter cup of black beans, mixed in with the pulp of a baked sweet potato. I cook 3 sweet potatoes at a time in my toaster oven and make 2lbs of black beans... so all I am doing during lunch is combining the beans with the sweet potato and toasting again as it lays flat. I add tahini dressing which is just lemon, tahini, salt and garlic, hot sauce and cilantro. I could live on it! I have also added cooked quinoa and roasted chickpeas both of which can be made ahead of time and toasted up with the other ingredients. 💙
