Veggie fried rice. 2tbsp of canola oil for the entire batch. That includes the sautéed onion, carrot, and celery as well as cooking the eggs. Less than 500 calories per cup.

Yay fried rice! But no way I could stick to just 1 cup of that deliciousness :)
