What does one make when they have to have dinner done before the husband gets home from work so we can wolf it down before heading out to revival? What does one make when all they have thawed is a rotisserie chicken and have frozen green beans? What does one make when they need to make this quick limited ingredient low carb meal? Well, I found a recipe for chicken green bean casserole which uses the chicken shredded up, the beans, cream, cream cheese, parm cheese and mozzarella! Mixed it all up and put it in the oven and its already done and just needs to be warmed before hubby gets home! Its smell yummy. Greg likes to tease that I don't know how to cook cause he's a chef and I bake, but I've been pulling it off all week! Course I can't wait till he takes over the cooking again! But this week I did get a meatloaf in the freezer and may have enough of this left to put up for another night. I'm hoping we can start planning ahead so we can go to the gym and not have to rely on fast food! I feel great. The scale isn't cooperating but my energy and blood sugar are! And our revival has been so awesome! Getting my wonder and remembering the glories that God has provided!

I do a stir fry using coconut oil and butter with tumeric, garlic, ginger and any veggies I can find like green beans, onion, red and orange sweet peppers and some salsa spices. goes great with roast chicken. Started looking on pinterest for paleo recipes and ketonic recipes, lots of amazing one out there. follow me if you like at www.pinterest.com/meximoll/

Thanks everyone! Yes HCB, that scale is an idiot box. I do weigh daily for a spreadsheet I use, but I know I feel better than I used to, so that and my blood sugar are my daily measurements. Husband Chef's are wonderful! Till we eat way too much good food! dotsdaughter, I should try a stir fry, that sounds pretty good. Unfortunately I don't like most vegetables. I do love spices though. The hardest thing about this diet is I only like three vegetables that I am allowed to have right now and only two others that are higher carb. Also have an intestinal issue that means no raw vegetables. I've been looking into keto recipes and some paleo. I'll look you up on pinterest!

I wish you and Greg were my neighbors---a chef and a baker...what more could one want. Glad to hear that you are enjoying the revival. Daily I, too, am reminded the awesomeness of our God and how richly blessed we have been. I encourage everyone to pray for our country...she is in great need. Keep up the good works, Dorinda!

Thanks Gwen. Our God is a great God, and greatly to be praised! I pray for our country too. And our leaders as in Timothy. Our prayers are not for naught. God can bless us and make our way better in spite of the direction of our country, and many hearts can be touched by the love of Jesus.
