Here it is Monday, and I am finally back on track! Spent all day yesterday meal prepping for the week and it was awesome! I made seared chicken breast with roasted sweet potatoes, turkey meatballs, with homemade marinara and whole wheat pasta, and seared steak with rice and black beans and broccoli is my veggie of choice this week. I almost made egg "muffins" with egg, sausage, roma tomatoes and a touch of cream cheese for breakfast/snack. Going to be a GREAT week!
