Ok, today in between meetings I put together dinner. We made home made spaghetti sauce over the weekend with fresh roma tomatoes, Italian spices, olive oil, red wine vinegar, and at the end I added pepperoni and seasoned ground beef. Well today I breaded chicken breasts with golden flaxseed and carbalose flour, a little Romano/parmesan, and some seasonings. I browned in a frying pan with butter and olive oil. In a bowl I mixed an egg and a small carton on ricotta cheese, and seasonings and mixed well I layered this on the bottom of a casserole dish, placed the chicken on top, then put on some spaghetti sauce and mozzarella and parmesan. I baked for one hour at 350 F. I had it covered and if I do it again I will uncover a bit so the cheese can brown, but I thought we were leaving right away to take my grandson home and wouldn't get to eat, so I didn't do it. I cooked some green beans with butter and Italian seasonings. The chicken itself is less than 8 carbs. Beans about 5, so you can use something else or just not add a veggie.

Thank you Ann. If its not enough to see my paltry attempts at cooking, my husband used to be a chef! I bake and am finding low carb baking to be a challenge. Prayers are getting to be a daily occurrence and I'm finding it so refreshing! I am amazed at how blessed I get from praying for others.
