After my mixed-fruit breakfast, for lunch today I ate my first vegetable salad in about two weeks. It made me appreciate how lucky I am to have access to delicious, fresh fruit and vegetables, something I don't think I'll ever take for granted again.

I mixed up almost all of the same fruits today in a spoonful of plain Greek yogurt, a squirt of lemon juice and a little shredded coconut. It's pretty tasty.
