Based on CHOCOLATE OLIVE OIL CAKE by Nigella. Didn’t add sugar or flour. Topping approx 85g mascarpone and 125g whipped cream (I’ve kept topping in Tupperware in fridge and will add when I eat so cake will keep fresher for longer)

Would you happen to know if the cake freezes ok?
I have developed a bad habit of scoffing the majority of my low carb cookies the day I bake them😳 (so now make them in small batches of 5!!)

I haven’t frozen but Nigella says it freezes - double wrap with clingfilm and then tin foil!

I’m with you on the scoffing I make cookies/biscuits: 200g ground almonds, an egg and mixed spice. Made into dough and then rolled out, cut and baked for 12 mins 😋
