Raw vs. Cooked vegetables: very different in taste. I would just experiment a bit. And the best way to preserve all of the vitamins & minerals is to just pile a heap in a microwave safe bowl, splash with a tablespoon of water, and microwave it for a minute or two. Boiling and blanching just leaches out all the good stuff. And some veggies always taste best raw, like sugar snap peas (the fat ones, not the skinny peas in a pod, which are snow peas and are used in Asian stir frys a lot).

BB, a lot of what you already eat can be the basis of a good vegetarian meal: baked sweet potato stuffed with black beans, kidney beans or black-eyed peas flavored with sautéed onion, bell pepper, garlic and hot sauce. Any kind of baby greens sautéed with mushrooms, onions, garlic and air fryer crispy potatoes Roasted Veggie Sheet Pan dinner: Butternut Squash, onion, bell pepper, cauliflower seasonings of your choice add some chick peas for extra protein. So happy to see you stepping out of your comfort zone and trying new things.

Down a pound feels good doesn't it? I'm rooting for you, and so glad you are eating more vegetables. I eat a lot of salad but need to eat more kinds of vegetables. I recently saw on Youtube that our friendly bacteria are so much better with more variety.
