Vietnamese-Style Pulled Chicken Sandwich. Red onion, cilantro, chicken, kimchi and lettuce. This recipe is from the Runner's World Meals on the Run. I'm not a runner, but the "recipes in 30 minutes or less" got me! They still take me about an hour, but that's just lack of skills. Oh and a side of slaw.
