That looks good to me. I use an Orion cooker which has charcoal on the outside of the container on top and bottom. The wood is placed inside of the container. Kind of like convection cooking. But, I get similar results. Happy eating !!

That looks gorgeous, I love turkey. Just doesn't seem to work freezing it after cooking for some reason, have you ever tried that? Mine is sort of watery, this is after slow cooking in a closed metal dish

We used to smoke turkeys. The legs and wings make amazing bean soup, although you have to be careful to get all the wee little bones out

Thank you all for the comments! The Turkey Legs were great, but not traditional (fair fare). Will definitely investigate and try again.
Yesterday was supposed to be Dino Ribs (beef short ribs). Instead of large riblets I wound up with each rib cut into 4-5 strips, ready for Chinese short ribs. Oh well !
