Broccoli, chanterelles, and chicken salad. The broccoli decided to start going bad after just a couple days, so I wanted to use up what was still good.

that looks really good. great using up the broccoli! I just read the date on my salad greens and they expired 3 days ago. kinda bitter tasting! I ate a bit but composted the rest. I don't want to be sick from spoiled greens. I did that with some romaine lettuce I bought and really don't need a repeat. lol.

I with you Taiwyn. I'm starting to tighten up own my eat by dates. Fresh = more vitamins. Choosing fresher produce at purchasing makes a difference. I look for tight florets, perky dark leaves. Condensation, temperature changes all speed up spoilage. That's where our $ goes down the drain. Disappointing when you reach for your healthy veggies to find that's it past it's peak. The only leafy veggie that stays in the bin more than 3 days is in the cabbage family.

I've found that kale lasts an extra few days, and is usually on the cheaper side.
In general, though, I've had to learn how to cook (reasonably) healthy food using frozen, canned, and dried. The climate here spoils even live herbs!

Yeahh, I get spinach as my leafy greens but I like texture differences...was really hoping for some crunchy broccoli 🥦😭 Oh well
