Yes - I also pan fry it - sometimes. I love that food and that carbonated water - the new O or zero calories carbonated water - is fantastic - it comes in all sorts of differing flavors - I even saw a 12 pack in Cherry & Vanilla ...Nice treat.

I don't know how to reply to individuals, my apologies. I bake it for about 10 mins. sometimes I put some adobo on it, but usually just a shake of Italian seasoning.

I have roasted 17 acorn squash and 3 spaghetti squash so far.

I roast eggplant almost every week together with brussels sprouts and various peppers. I don't usually roast my zucchini and I'm not much of a fan of the yellow summer squash.

I just love eggplant ! Lately I’ve been marinating eggplant and red peppers in vinegar cumin pepper then add A few green olives. I usually sauté or put in my airfryer .
Occasionally I add chicken breast
