The "sauce," ajf, is gravy made from the pan drippings. We Cajun s always make gravy; what's missing from this meal is the rice. Growing up, we had "rice and gravy" every day, now I only have it occasionally.

Well ajf, in order to make fried rice, you have to start with steamed (or boiled) rice. You might like rice & gravy too, as you thoroughly mix them together, using lots of gravy. 😋
