Oh my God! I call it Pepperoni Pizzucchini. Medium zucchini sliced lengthwise into four 1/2” thick strips. Coat with olive oil, kosher salt and pepper to taste. Sauté medium to med-high heat 3 minutes a side. Coat bottom of 9x9 pan with marinara. Put the zucchini in one layer on top of the sauce. Divide remaineder of sauce (I used 3/4 cup total) evenly on each strip of zucchini. Top with mozzarella, sprinkle with Parmesan, oregano, basil, and pepperoni. Bake 375-400 until bubbly. Finish under broiler for 1-2 minutes. Holy cow so effing good!!!

I mean I guess you could call it pepperoni zucchini Parmesan, but there’s no breading. Keto friendly.
