It was super yummy! Eral- I didn't breakdown the calories for this. I had a huge workout this morning and knew I could "afford" it. FUFifty - I did this one super simple. Just sliced zucchini with a potato peeler, and layered the zucchini, mozz and sauce a few times. Topped with more mozz, parm and fresh oregano. Could've used some ricotta but I just used what I had on hand.

I am full, and this picture still makes me drool. I'm assuming you used that squash instead of noodles? Is there meat in there, too? I really need to get better with my cast iron pans.

Liz yes I just used the squash instead of noodles. No meat in here although you def could. Just threw it together quick with what I had on hand

So if you bake in a cast iron pan, does it change the cooking time vs. a glass pan? Or do you just eyeball it by how the cheese looks? I might need to get a good cookbook or magazine about cast iron cooking. I don't use my pans enough.
