they’re mini spinach frittatas! just sautee some spinach and garlic (i also add mushrooms) then beat a bunch of eggs (1 per frittata), grease a muffin pan and put spinach and mushrooms in the bottom then fill with egg. bake at 350 for 30 mins and voila! 190 cal per 2 frittatas :)
