It's a gorgeous day here in the Rose City! I woke at 5:30 this morning and couldn't get back to sleep, so instead of being out running around in the sunshine, I'm baking and entering a new recipe in my cookbook. The Apricot Granola Bars smell so good they're making me hungry; just about time for lunch (not the Bars!)
I really did need to bake a fresh loaf of bread; today I'm baking whole grain dill rye bread; it's going to be smelling great shortly when it hits the bake cycle in my bread machine. Okay, after lunch I'm going out into the garage to ride my recumbent bike!
Zumba Gold was and absolute blast yesterday. The instructor, Aylin, is great. She encourages us to dance at our own level, showing us different options. Then, when we're dancing, she encourages us to dance sexy, or add drama; so fun!
Yesterday she was encouraging sexy in one song, she and I ended up dancing right next to each other in the sexiest part, face to face. I burst out laughing, she said I wasn't supposed to laugh at her "sexy". I was laughing so hard it took me a minute to tell her that I was actually laughing at my own "sexy". OMG, a good workout and lots of laughter, I left there feeling soooooo good!
My eating was good yesterday, only tried a couple of my healthy peppermint patties. They were fun to make, but messy, and they soften quickly out of the fridge. Made out of coconut butter, agave, peppermint extract, cocoa powder, coconut oil, and water; most interesting. I'm taking treats to my physical therapist again this afternoon; she enjoys them, easily burns them off, and I don't have as much temptation. I'm taking some to my friend Vilma and her husband tomorrow when I see her at Zumba.
Better eat that lunch before I eat a whole pan of apricot granola bars...
