I thought i posted the recipe but this was:
1 cup arugula
1/2 cup cooked cold quinoa
1/2 cup chickpeas
1/4 cup peppers
4 bocconcini (mini mozz balls) cut in half
4 Kalamata olives
few tablespoons of olive oil, drizzle some balsamic glaze & some salt for dressing!
