Recipe: 4 ripe bananas (mashed), 1 large egg, 1 T vanilla, 3 T brown sugar, 2 T white sugar, 1 tsp. cinnamon, 1 tsp. baking powder, 1 tsp. baking soda, 1/2 tsp. salt, 1 1/2 cups whole wheat flour, 2 T unsalted butter, melted, 1/2 cup walnut pieces (optional). Combine first six ingredients, mix dry ingredients in separate bowl, then combine with banana mixture. Fold in melted butter. Bake in greased muffin tin at 350 F for 18-25 minutes. Makes 12 muffins, 130 calories each without nuts, not sure how many with. Enjoy!
