4 medium eggs, 1 tablespoon vanilla, 250ml coconut cream, 50g coconut flour, 1 teaspoon baking powder, 4 tablespoons sweeter (I used 3 of xylitol) Whisk the eggs, vanilla, and coconut cream until smooth. Add the coconut flour, baking powder, and sweeter and mix until smooth. Leave for 5 minutes or so (apparently it's important for the coconut flour to have a few minutes lol) then put a large spoonful in a pan over a medium/low heat (I didn't use any oil but the recipe said to use coconut oil) They're more like American pancakes, should be about 3 or 4 cm across, so wait until you see bubbles forming on top and then flip. They're kinda soft, so use a really thin spatula to get under them. The nutrition info was for pancakes with blueberries which I didn't add, but they come to roughly 5g per pancakes.
