My husbands family likes fried green tomatoes. I had never had them or cooked them so I thought it sounded like a good idea for some of our tomatoes. THen I discovered they dip them, bread them and fry them. Sort of put a stop to any ideas of creating something new with tomatoes that I might like too much, better not to even start.
Its great that you can actually do canning and preserving. I wish I had been taught how to do that. No wonder you have so many tomato plants!

Here's a green tomatoe ketchup recipe.
A green tomato ketchup recipe. More green tomato recipes below.
Ingredients:
6 pounds green tomatoes
3 pounds onions
2 teaspoons black pepper
1 tablespoon dry mustard
1 teaspoon Worcestershire sauce
2 teaspoons mixed pickling spices, optional
2 cups vinegar
1 cup honey
Preparation:
Slice green tomatoes and onions; place in a large pot with pepper, mustard, and Worcestershire sauce. If using, put the mixed pickling spices in a small cheesecloth bag and add to the mixture. Pour vinegar over all and cook for 4 hours over very low heat, stirring occasionally. Carefully puree mixture in a blender; strain through a mesh strainer. Return to pot and bring to boil; add honey. Immediately fill 6 sterilized pint jars, leaving 1/4-inch head space. Wipe the jar tops and threads clean with clean damp towels. Place hot sealing lids on the jars and apply the screw on rings loosely. Process in boiling water bath in a deep canning pot for 5 minutes. Remove the jars and cool completely. Tighten the jar screw rings to complete the sealing process. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, it is not sealed and must be refrigerated.) Let jars of green tomato ketchup stand at room temperature 24 hours. Store unopened product in a cool dry place up to one year. Refrigerate green tomato ketchup after opening.
Makes 6 pints of green tomato ketchup.

1 1/2 cups sugar
1 teaspoon mixed pickling spices
1 teaspoon yellow mustard seeds
1/2 teaspoon ground turmeric
2 cloves garlic, finely minced
Preparation:
Put ground vegetables in a large nonreactive container with salt; gently stir to combine. Top with abour 3 cups of ice cubes, cover, and let stand for 3 hours. Drain and lightly rinse.
In a large, nonreactive kettle combine the vinegar, sugar, spices, mustard seeds, turmeric, and garlic. Bring to a boil; reduce heat to medium low and simmer for 5 minutes. Add drained vegetable mixture and bring slowly to a boil. Simmer for 15 minutes.
Pack into clean jars. Wipe rims with a clean damp cloth and seal with 2-part lids. Process in a boiling water bath canner for 10 minutes.

You didn't do that bad on Friday, shared appetizer with C & G, picked off croutons from salad, you didn't even finish your main dish did you?? You could have been a lot worse, the desserts we saw going to the party outside looked good, yet none of us ordered any for ourself. Thanks for the selection ideas for my night out on Sat.
