Lunch: seiten loaf with onion, bbq sauce, mustard, kale sauteed in water with soy sauce, and onion, 5 baby reds with sauerkraut and mustard. This is the 2nd loaf of seiten I've made.

Looks good. I cannot eat seitan because it is pure gluten. That is good that you only ate about 1,500 calories. I try to stay around 1200. Just found a vegan dip at Costco...brand is Bitchin'Sauce, Chipotle dip. YUM! Made from almonds & spices. But WAAAAy too good. 2 tbsp is a svg. Right! So, it goes to my husband! I made carrot-ginger soup...really good. added brn rice & black beans to it. Excellent.

Paula, are you familiar with High Carb Hannah? She has some amazing recipes online. Has lost a lot of weight.

Delgadalahna, yes, I am aware of high carb Hannah. She has done a good job of weight loss on whole food carbs!

I do make seitan balls these days in combination with butter beans or chickpeas. Any seasoning you like. And then I use the aquafaba to make a ‘cheese’ 😋

Keyten77, yes the macro ratio for high carb would be 70 or higher whole food plant based carbohydrate intake. Keeping fat low around 10%. Those are the macro ratios I am watching for myself. The McDougall Starch solutions main focus is on the starches. If you are eating enough calories in plants and starches the protein ratio takes care of itself. I like that we can track these on the FS.

Schmetterlinge34, I want to try a gluten free seiten recipe soon! I will post when I do! The seiten balls you speak of with aquafaba sounds yummy!

Keyten77, I also am a high volume eater. Meaning I can eat a lot! So, I also work on my plate having 1/2 non starchy vegetables. I also keep my eye on the calorie density of the foods I choose to eat. On utube I watch Jeff Novick's calorie density lecture to keep me full! Jeff Novick's lecture has helped me to add more foods with greater nutritional density with out adding unwanted calories.
