While finding ways to incorporate foods my taste buds do not particularly like, I decided to mix and match flavors. Avocado isn't a favorite at this time, however, I made a Chicken Salad using 1/2 a cooked skinless/boneless breast, 1/2 Hass Avocado, mashed, 1/2 celery stick, finely diced, 1 tsp scallion, minced, 1 tsp cilantro, finely chopped, 1 tsp extra virgin olive oil, 1 tbsp lemon juice, salt and pepper to taste. Mixed all together and enjoyed, the lemon and onion was sweet and tangy, which made this yummy!
